This Kale and Broccoli Slaw Salad is something that I copied from Trader Joe's. You can add shredded cooked chicken to make it more of an entrée. Kale is much better if you massage the dressing into it. You can make it ahead and let it sit with the dressing.

Yields: 4 - 6 Servings
Ingredients
5 cups kale, finely chopped
2 cups red cabbage, shredded
3 cups broccoli slaw
½ red onion, sliced thinly
½ cup dried cranberries
¼ cup sunflower seeds
¼ cup slivered almonds, toasted
Sweet and Spicy Dressing
1cup plain, fat-free Greek yogurt
Juice of ½ a lemon
2 tablespoons olive oil
2 teaspoons honey
1 tablespoon apple cider vinegar
1½ tablespoons whole grain mustard
Sprinkle of cayenne pepper
Salt and pepper, to taste
Directions
1Combine all of the Sweet and Spicy dressing ingredients into a big bowl. Mix with a whisk. Taste and season accordingly. Set aside.
2Assemble the salad. Toss chopped kale, broccoli slaw, and green cabbage together. Add the cranberries, sunflower seeds and almonds. Drizzle the dressing on top and toss it all together. Let the salad sit for 30 minutes or so to allow kale to soften.
