Japanese Style Pan Seared Tilapia

This Japanese Style Pan Seared Tilapia is so simple to prepare. The marinade, which is soy sauce, sake (or white wine), mirin, sugar and some fresh ginger gives it a sweet tasting depth of flavor. Marinating the fish overnight is the best, but you can also do it in 4 hours.

Ingredients

Marinade

¼ cup soy sauce

¼ cup sake or dry white wine

¼ cup mirin or sweet sherry

1 Tablespoon sugar

2 Tablespoons grated fresh ginger

Fish

4 fish fillets (tilapia or red snapper), about 6 ounces each

Olive oil

Kosher or sea salt and freshly ground black pepper to taste

Lemon slices, for serving

Directions

Marinade

1Combine all the ingredients in a small saucepan. Bring to a boil over medium-high heat, and then immediately remove from the heat. Cover and let cool to room temperature.

2Pour the marinade over the fish. Cover and refrigerate for 4 hours or overnight, turning the fish occasionally.

Fish

1Add oil to a medium skillet or sauté pan, and cook fillets over medium heat for 4 minutes per side, or until the fish is no longer translucent and flakes easily with a fork.

2Season with salt and pepper, and serve hot, garnished with fresh lemon slices.
