Jamaican Pound Cake

This Jamaican Pound Cake is an old recipe I found in my mother-in-law's cupboard. It's made from a boxed pound cake mix with the addition of rum, bananas, sour cream and almonds. It's super simple and so good!

  • Prep: 10 mins
  • Cook: 1 hrs 10 mins
  • Yields: Makes 1 loaf cake

Ingredients

1 large ripe banana

2 eggs

¼ cup dark Jamaican rum

1 package pound cake mix

½ cup sour cream

½ teaspoon nutmeg

3 Tablespoons sliced almonds to sprinkle bottom of loaf pan liberally

Directions

1Preheat oven to 325° F.

2Mash banana. Blend with eggs and rum.

3Beat into pound cake mix until smooth. Beat in sour cream and nutmeg.

4Butter a 9" x 5" x 3" loaf pan and sprinkle with almonds.

5Pour batter into pan. Bake for 70 - 75 minutes.

6Place on wire rack to cool about 10 minutes before removing from pan. Cool thoroughly before cutting.
