Hotel Citadel Celery Salad

I recreated this incredibly addictive Celery Salad, inspired by a dish from the Hotel Citadel in Jerusalem. Celery often takes a backseat, but in this salad, it shines. The combination of crisp celery, sunflower seeds, pistachios, almonds, and dried blueberries (or cranberries) creates a satisfyingly fresh and crunchy texture. The tangy lemon honey dressing perfectly complements the salad's flavors.

  • Yields: 6 - 8 Servings

Ingredients

2 bunches of celery, chopped

2 large shallots, diced

1 bunch fresh parsley, diced

1 bunch fresh cilantro, diced

Handful toasted sunflower seeds

Handful chopped pistachios

Handful toasted sliced almonds

½ cup dried blueberries or cranberries

For the dressing

2 large lemons, juiced

¼ cup plus 2 tablespoons avocado oil or olive oil

1½ teaspoon salt

1 teaspoon pepper

1 teaspoon garlic powder

¼ cup honey

Directions

1Throw everything into a bowl, whisk together the dressing and pour over the salad and mix.

Honestly, Blyth – this salad is so good but your picture is a crime. How about cutting some nice thin slices of celery on the bias to stack up on the plate and keeping those herbs big and leafy? That picture minimizes what an amazing recipe you’ve recreated here!

A small clove of freshly chopped garlic instead of powder works great. Def prefer the blueberries to cranberries.

Your recipe is a staple in my salad stable.

I have been searching for a good celery recipe for a long time. This is not only good….it’s absolutely far out crazy delicious. There are no words I can find to properly describe it!!!!! Oh, and healthy! I can’t stop eating it
