Ham Croquettes (or any other leftover meat and mashed potatoes)

I don't really like leftovers. It's because I do not want to eat the same thing again, so I love to reimagine leftovers in a different way. These Ham Croquettes (or any other leftover meat and mashed potatoes) is a perfect example. By the way, I just ate these and they are to die for! These crispy Ham Croquettes are little logs of seasoned minced ham and mashed potatoes. They would also be good as an appetizer with a cold glass of rosé wine. What's not to love!?

Ingredients

2½ cups leftover mashed potatoes

1½ to 2 cups cooked meat, chopped (like ham, turkey, chicken pork, or lamb)

¼ cup Parmesan cheese, grated

2 tablespoons flat-leaf parsley, chopped

1 green onion, chopped

salt & pepper, to taste

1 cup flour

2 eggs, beaten

¾ cups panko breadcrumbs

4 tablespoons vegetable oil

Directions

1Preheat the oven to 375° F.

2Mix mashed potatoes in a large bowl with the chopped meat. Then add the Parmesan, parsley and green onion. Season with salt and pepper, then mix together really well with your hands.

3Divide the mixture into 12 and roll each piece into even-sized log shapes. Coat each log in flour, shaking off any excess.

4Season eggs with a little salt and pepper and whisk.

5Pour the panko breadcrumbs into another bowl.

6Dip each log into the egg mixture, and then into the panko breadcrumbs, making sure to coat each one well. Repeat with the remaining logs and put onto a baking tray.

7Heat about the vegetable oil in a frying pan over medium-high heat. Put half the croquettes into the pan and cook for around 6 - 8 minutes, turning regularly until all sides are golden. Put on a separate baking tray and repeat with the remaining croquettes. When they are all cooked, put in the oven for 12 minutes.
