Grilled Sausages with Caramelized Onions on Corn Polenta

Grilled Sausages with Caramelized Onions on Corn Polenta is a delicious combination. The sausages are nestled on a bed of polenta that has fresh corn and Parmesan cheese and then topped with grilled sausages and richly sweet, caramelized onions. It's perfect for a cool autumn night.

Directions
Caramelized Onions
1In a medium skillet over medium heat, melt butter. Add onions and cook, stirring often, until starting to soften.
2Reduce heat to medium-low and continue to cook, stirring often, until deep golden brown, 45 to 60 minutes.
Polenta
15 cups water to boil in a heavy large saucepan over high heat. Gradually whisk in polenta, then the salt and sugar. Reduce heat to medium-low; simmer until polenta is tender, thick, and creamy, whisking often and adjusting heat to maintain a gentle simmer, 25 to 30 minutes. Add corn kernels and cook, stirring constantly, until corn is tender, about 5 minutes. Mix in parmesan cheese. Season polenta to taste with salt and pepper.
Sausage
1Heat olive in a skillet and add the sausages.
2Cook over medium-high heat until browned, about 5 minutes, turning links often.
3Reduce heat to medium-low. Carefully add ½ cup water to skillet.
4Cover and simmer for 12 minutes or until sausage internal temperature reaches 160° F.
5Spoon polenta onto each of 6 plates. Top with grilled sausages and caramelized onions and serve.
