I saw this Grilled Pineapple and Pesto Turkey Burgers recipe in the coupon section of the newspaper. It's from Dole and I have to say, it's really good! I will make this again.

Yields: 10 Servings
Ingredients
6 cups spinach
2 pounds lean ground turkey
½ cup prepared pesto sauce, divided
2 tablespoons olive oil
salt and pepper, to taste
20 ounce can pineapple slices, drained
10 kaiser or hamburger rolls, sliced
10 green leaf lettuce leaves
10 slices Monterey Jack cheese
Directions
1Process spinach in a food processor until finely chopped. Combine turkey, spinach, ¼ cup pesto sauce, and olive oil in a large bowl. Gently mix until incorporated.
2Form mixture into 10 patties. Season patties with salt and pepper.
3Grill turkey until no longer pink inside. Add pineapple slices to grill the last 5 to 10 minutes and cook until golden brown.
4Toast buns on grill.
5Place lettuce on bottom half of each bun.
6Place burger on bun. Top with cheese, remaining ¼ cup pesto sauce, and grilled pineapple slice. Place on bun top.
Yes, Eric is right. Lean ground meat doesn’t have enough fat to hold it together, so adding an egg would help. I totally hated when my healthy burgers crumbled. In order to keep the fat content down, I like to use pourable egg whites.

This is really good stuff–as the chap who grilled these, I think that an egg mixed into meat mixture would hold things together a little better. Great burger alternative.

Yes, Eric is right. Lean ground meat doesn’t have enough fat to hold it together, so adding an egg would help. I totally hated when my healthy burgers crumbled. In order to keep the fat content down, I like to use pourable egg whites.
