Greek-Stytle Chicken Meatballs

I made these Greek-Style Chicken Meatballs for dinner last night, which reminds me of another recipe called Chicken Zorba.  These meatballs are perfectly flavorful and delicious, which include spinach, lemon and feta cheese. It can be served for an appetizer, lunch or dinner.

  • Yields: 4 Servings

Ingredients

3 cloves garlic, minced

¼ cup green onions, finely chopped

¼ cup flat-leaf parsley, finely chopped

2 tablespoons chives, finely chopped

2 cups spinach, chopped

zest of 1 medium lemon

½ teaspoon kosher salt

½ teaspoon red pepper flakes

½ teaspoon smoked paprika

½ cup crumbled feta cheese

1 egg

1 pound ground chicken

Directions

1Use a fork to combine all ingredients except egg and chicken in a mixing bowl. Add egg and chicken, gently mix and form 1-ounce meatballs with your hands. Refrigerate for at least 30 minutes.

2Preheat the oven to 350° F.

3Heat some olive oil in a large frying pan over medium heat.

4Shallow fry in olive oil over medium heat until golden brown then finish in the oven for 5 - 8 minutes or until cooked through.

5Remove from oven and serve with vegetables, hummus, tzatziki and pita bread.
