Gochujang Brussels Sprouts

Gochujang Brussels Sprouts is delicious. It combines the slightly bitter and earthy flavor of Brussels sprouts with the sweet, spicy, and savory notes of gochujang, a Korean chili paste. It’s a great side dish for chicken, fish, or tofu, or eaten as a snack or light meal.

Ingredients

Brussels Sprouts

2 pounds Brussels Sprouts, trimmed and halved

3 tablespoon extra-virgin olive oil

½ teaspoon salt

¼ teaspoon pepper

Gochujang Sauce

6 tablespoons unsalted butter

4 cloves garlic, minced

⅓ cup Gochujang

¼ cup pure maple syrup

3 tablespoons soy sauce

1 tablespoon water

1 tablespoon sesame oil

Garnish

3 stalks green onions, thinly sliced

½ tablespoon toasted sesame seeds

Directions

1Preheat your oven to 450°F. Place your oven rack in the center of your oven.

2In a large mixing bowl, toss the Brussels sprouts with oil and season

3with salt and pepper. Spread evenly on two baking sheets in a single layer. Roast the Brussels sprouts rotating the baking sheets halfway and flipping the Brussels sprouts, until they are charred about 30 minutes.

4In a medium skillet, melt the butter over medium heat. Then cook the minced garlic until fragrant and lightly browned. Then add the Gochujang, soy sauce, maple syrup, and water and mix until combined. Remove from heat and mix in the sesame oil.

5Combine the Brussels sprouts and Gochujang sauce in a bowl and toss to combine. Transfer to a platter and garnish with green onions and toasted sesame seeds.
