Gin Pickled Onions

My husband makes fantastic pickled red onions, and this gin-infused version is a real standout! These Gin Pickled Onions add gin and vinegar. The flavor is further enhanced with dry spices often found in gin, such as coriander and juniper, along with bay leaves for a truly superior pickled red onion. They brighten up sandwiches, tacos, cheese boards, and burgers, they're an absolute game-changer.

Ingredients

1 teaspoon junipers berries

1 teaspoon coriander seeds

1 teaspoon allspice berries

1 teaspoon mixed peppercorns

100ml gin

250ml white wine vinegar

100ml water

1 teaspoon salt

⅓ cup sugar

1 bay leaf

2 sprigs of fresh thyme

2 pieces of lemon rind

1 large garlic clove

4 red onions

Directions

1Put your dry spices into a pan and dry roast them for a few minutes till fragrant. Add your gin to the hot pan, the alcohol will boil off instantly, then add vinegar, water, sugar, salt, herbs, lemon rind and garlic. Leave on a low heat till sugar is dissolved then turn heat off and allow to infuse for an hour. Finely slice your onions. A mandolin is ideal to get them super thin, but a knife will do the job.

2Stuff them into two approximately 18 ounce jars. Pour the hot liquid on top of the onions. Leave till at room temperature then refrigerate. You can eat these within a few hours but best left a couple of days till the liquid turns pink.
