My late mother-in-law fondly recalled enjoying this Eggnog Pie during her childhood. I'd never heard of it before, and I'm still wondering why! It's seriously delicious. If you love eggnog, you're going to love this – it's super easy to make. It’s now a tradition in our family to have it on Christmas day.
Ingredients
1 tablespoon unflavored gelatin
¼ cup cold water
⅓ cup sugar
2 tablespoons cornstarch
¼ teaspoon salt
2 cups eggnog
1 teaspoon vanilla extract
1 teaspoon rum or rum extract
¼ teaspoon nutmeg
1 cup heavy whipping cream, whipped
1 - 9" pastry shell
Directions
1In a small bowl, sprinkle gelatin over water; let stand 1 minute.
2In a saucepan, combine the sugar, cornstarch and salt. Stir in eggnog until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in gelatin until dissolved. Remove from the heat; cool to room temperature.
3Stir in vanilla, rum and nutmeg; fold in whipped cream. Pour into pastry shell. Refrigerate until firm.
