2 cups frozen edamame, shelled
½ cup orzo pasta
¼ cup red bell pepper, chopped
2 Tablespoons olive oil
2 Tablespoons fresh lemon juice
1 teaspoon garlic, minced
1 teaspoon grated fresh lemon zest
½ teaspoon kosher salt
Directions
1Cook edamame and orzo according to package directions; drain. Combine edamame, orzo, bell pepper, oil, lemon juice, garlic, lemon zest, and salt. Refrigerate until ready to serve.
