Ingredients
Salad
1 package frozen shelled edamame, cooked and cooled
1 cup red quinoa, cooked
2 celery ribs, sliced
¼ cup green onions, chopped
½ cup shredded carrots
2 tablespoon Italian parsley, chopped
1 gala apple, diced
1 avocado, cubed
⅓ cup sliced almonds
Dressing
1 medium lemon (juice only)
2 tablespoons extra virgin olive oil
2 medium cloves garlic, minced
¼ teaspoon sea salt, or to taste
¼ teaspoon ground black pepper, or to taste
Directions
1In a large bowl, combine salad ingredients and set aside. In a separate bowl combine dressing ingredients. Drizzle dressing into the salad and enjoy. If preferred chilled, refrigerate an extra 20 minutes before serving.
