Dutch Baby Pancake

A Dutch baby pancake is a sweet popover that is normally served for breakfast. It is baked in a cast iron or metal pan and falls soon after being removed from the oven. They are very easy to make and so good.

Ingredients

3 eggs

½ cup flour

½ cup milk

1 tablespoon sugar

4 tablespoons butter

syrup, preserves, powdered sugar or cinnamon sugar

Directions

1Preheat oven to 400°F.

2Combine eggs, flour, milk and sugar in a food processor or blender and mix until smooth. The batter may also be mixed by hand.

3Place butter in a heavy 10-inch cast iron skillet or baking dish and place in the oven. As soon as the butter has melted add the batter to the pan, return pan to the oven and bake for 20 - 25 minutes, until the pancake is puffed and golden.

4Remove pancake from oven, cut into wedges and serve at once topped with syrup, preserves, powdered sugar or cinnamon sugar.

These are really delicious. A squeeze of lemon juice along with the powdered sugar is a nice addition.
