Double Decker Tacos

Double Decker Tacos - a taco shell in the center of a flour tortilla, spread with beans and cheese.Then you fill the taco shell with beef, more shredded cheese, shredded lettuce and tomatoes.The refried beans act as the glue in the double decker taco. This is a family tradition in our house.

Ingredients

10 taco shells

10 small flour tortillas, snack size

1 pound ground beef

2 Tablespoons taco seasoning (see recipe below)

2 cups cheddar cheese, shredded

2 cups lettuce, shredded

16 ounce can refried beans

Taco Seasoning

1 Tablespoon chili powder

¼ teaspoon garlic powder

¼ teaspoon onion powder

¼ teaspoon crushed red pepper flakes

¼ teaspoon dried oregano

½ teaspoon paprika

1½ teaspoons ground cumin

1 teaspoon sea salt

1 teaspoon black pepper

Directions

1Brown ground beef. Drain. Add 2 Tablespoons taco seasoning (see recipe below) and ¼ cup water.

2While beef is simmering put refried beans in a small sauce-pan to warm over low heat. May need to add 1-2 tablespoons of water to the beans to thin them out a bit.

3Warm soft tortillas in a dry skillet over low to medium heat. You don't want to brown or crisp them at all. Just warm them on both sides so that they are pliable.

4Keep tortillas warm in foil. These can be placed in a warm oven if needed.

Assemble the tacos:

1Spread warm beans on a warm flour tortilla Sprinkle beans with shredded cheese.

2Stand a taco shell in the center of tortilla spread with beans and cheese. Gently press the soft tortilla onto the sides of the taco shell. Fill taco shell with beef, more shredded cheese, shredded lettuce and salsa.

Taco Seasoning

1In a small bowl, mix together chili powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, cumin, salt and pepper. Store in an airtight container.

2For 1 pound of ground beef, use 2 Tablespoons of the taco seasoning mix.

You gave us this recipe years ago and they are still the standard taco in our house – plus we have shared this recipe with many Australians, the Double Decker Taco is thriving down here!

And much more user friendly than just the crisp tacos shells that always fall apart. You still get taco neck, but what a way to go!!
