I keep seeing Dill Pickle Hummus everywhere. Trader Joe's makes it, but I decided to concoct my own. My husband likes anything with pickles. When we were dating about 100 years ago, I remember going to the market and he bought a jar of pickles and ate the whole thing in the car on the way home! This should have been a tip-off!

Ingredients
2 cups canned chickpeas, drained
½ cup dill pickles, chopped, plus more for garnish
2 tablespoons tahini
¼ cup extra-virgin olive oil, plus more for serving
¼ cup pickle brine, from the jar
½ juice lemon
2 cloves garlic
1 teaspoon cumin
kosher salt
Freshly ground black pepper
pinch of crushed red pepper flakes
1 tablespoon dill, chopped, for garnish
Pita chips, for serving
Sliced vegetables, for serving
Directions
1Place chickpeas, dill pickle brine, lemon juice, tahini, oil, brine, garlic, and cumin into a food processor. Stir in the chopped pickles. Season with salt, pepper and red pepper flakes and blend until smooth.
2Pour into a bowl and drizzle with olive oil. Top with chopped pickles and dill and serve with pita chips and sliced veggies.
