This Curried Chicken Waldorf Salad is an update on the classic salad. The dressing combines mayonnaise, curry powder, turmeric and a bit of mango chutney, which adds the perfect amount of sweetness to compliment the tart Granny Smith apples. I love the crunchiness of this salad.

Ingredients
1 - 1½ cups shredded cooked chicken
2 cups unpeeled Granny Smith apples, chopped
½ cup celery, sliced
½ cup golden raisins
¼ red onion, julienned
¼ cup toasted slivered almonds
mixed greens, to serve
Dressing
½ cup mayonnaise
¾ teaspoons curry powder
¼ turmeric
2 tablespoons mango chutney
salt to taste
Directions
1In a small bowl, whisk together the dressing.
2Add the chicken, apples, celery, raisins, onion and almonds. Toss to coat all of the ingredients. Serve on a bed of mixed greens.
