Cucumber Pineapple Shrimp is a really simple and refreshing combination of flavors and makes a wonderful party appetizer. When I cater a party, I usually serve several hors d'oeuvres. I always like to serve some hot and some cold.

Yields: Makes 32 appetizers
Ingredients
8 ounces unsweetened crushed pineapple, drained
4 ounces tiny shrimp, rinsed and drained
¼ cup mayonnaise
1 Tablespoons green onion, finely chopped
2 teaspoons Dijon mustard
1½ teaspoons fresh dill, minced
1 medium cucumber (8 inches), cut into ¼ inch slices
Fresh dill sprigs, optional
Directions
1In a bowl, combine the pineapple, shrimp, mayonnaise, onion, mustard and dill. Spoon onto cucumber slices. Garnish with dill sprigs if desired.
