Crunchy Salt & Vinegar Chickpeas

My family has always been obsessed with anything salt and vinegar flavored. These Crunchy Salt & Vinegar Chickpeas are easy to make and so good, you might want to double the recipe.

Ingredients

2 15-ounce cans of chickpeas, drained and rinsed

2 cups white vinegar

sea salt, to taste

3 tablespoons olive oil

Directions

1Put chickpeas, vinegar and a dash of salt into a pot and bring to a boil. Remove immediately, once it starts boiling, and let beans soak for 40 minutes in the warm vinegar.

2Preheat oven to 400°F. After 40 minutes, drain chickpeas of excess vinegar.

3Place chickpeas on a baking pan. Toss with olive oil and salt.

4Bake in the oven for 35 - 40 minutes, checking every 10 minutes to stir them around and make sure they’re turning golden brown.

5Remove once toasted, and let sit for 10 minutes before eating.
