Crunchy Napa Cabbage Slaw

The key word here is crunchy! This Crunchy Napa Cabbage Slaw is so fresh tasting and the dressing is to die for!

Ingredients
8 cups (about 1 pound) coarsely shredded napa cabbage
12 ounces snow peas, strings removed and thinly sliced
1⅓ cups thinly sliced radishes
1⅓ cups thinly sliced green onions (including green tops)
1⅓ cups lightly packed fresh cilantro leaves
Soy Cream Dressing:
3 Tablespoons white wine vinegar
Directions
Salad
1Toast almonds in a 9-inch square pan in a 350° oven until golden, 6-8 minutes. Set aside.
2In a 4-6 quart serving bowl, combine cabbage, radishes, green onion, coriander and pea pods. If made ahead, cover and chill.
Dressing
1Stir together white wine vinegar and sugar until sugar dissolves. Mix in soy sauce, ginger, garlic, sesame oil and cayenne. Gradually add vinegar mixture to mayonnaise, stirring until blended. To serve, toss dressing and almonds with cabbage.
