My sister-in-law Rhonda gave me this recipe for Cowboy Butter. She said it was life changing! It's so delicious. You can make it 2 ways - one melted and the other like a compound butter, which can be used on top of cooked meat, vegetables or fish.

Yields: Makes 1 cup
Ingredients
1 cup butter, melted
Juice of ½ lemon
2 cloves garlic, minced
1 small shallot, minced
2 tablespoons Dijon mustard
1 tablespoon prepared horseradish
Pinch of cayenne pepper
¼ teaspoon paprika
2 tablespoons parsley, chopped
1 tablespoon chives, chopped
2 teaspoon thyme, chopped
kosher salt
Freshly ground black pepper
Directions
1In a small bowl, combine butter, lemon juice, garlic, shallot, mustard, horseradish, cayenne, and paprika. Whisk to combine.
2Stir in parsley, chives and thyme and season with salt and pepper.
3Serve with grilled meats, like steak chicken, or vegetables for dipping.
