Corn Medallions with Aioli, Cotija Cheese and Lime

My daughter Zoe made these Corn Medallions with Aioli, Cotija Cheese and Lime. It’s basically Mexican-style street corn sautéed instead of grilled.

It’s the perfect mashup of the balanced flavors that comprise great dishes - sweet corn, garlic aioli, sour lime, and salty cheese.

Cotija cheese is named after the town of Cotija, Michoacán where it originated, Cotija cheese has a strong, salty flavor and mostly used as a topping or mixed into sauces. Feta is a good substitute.

Ingredients

2 tablespoons mayonnaise

¼ teaspoon salt

1 clove garlic, minced

Juice from 1 lime, divided

2 tablespoons unsalted butter

3 ears of corn, shucked and cut into ½” slices

2 ounces of Cotija cheese, crumbled

1 teaspoon smoked paprika

Juice of ½ lime

Directions

1In a small bowl, mix the mayo, salt, garlic, juice from ½ a lime, until combined. Keep in the fridge until ready to use.

2Melt butter in a skillet over medium/high heat. Add corn and sauté until the corn gets brown on the edges.

3To serve, spread the desired amount of aioli on the corn, then sprinkle with Cotija cheese, smoked paprika. Squeeze the other ½ of the lime juice over and serve.
