Lunch is served! These Chicken, Broccoli Slaw, Gorgonzola with Champagne Pear Vinaigrette in Pita are delicious. You can even use firm tofu instead of chicken and make it vegetarian.

Ingredients
2 cups cooked chicken, diced
3 cups broccoli slaw
¾ bottle of Trader Joe's Pear Champagne Salad Dressing or recipe below
gorgonzola, crumbled, to taste
3 pita bread cut into halves
Champagne Pear Vinaigrette
4 Tablespoons Champagne Pear Vinegar
1 clove garlic, crushed
Pinch of sea salt and freshly ground pepper
4 Tablespoons olive oil
Directions
1Tossed the first 4 ingredients together and stuff into ½ of a pita bread.
Champagne Pear Vinaigrette
1Combine first 3 ingredients in a bowl and whisk well. Slowly pour in the olive oil, whisking vigorously to blend. Serve over salad.
