Cauliflower Fried Rice

Cauliflower rice is full of antioxidants like vitamin A and vitamin C, which can help lower your risk of cancer. Having had cancer, I am all for that. This Cauliflower Fried Rice is a great rice substitute being low in calories and carbs and is ideal for people with diabetes. The beauty of this dish is that you can use any vegetables you have on hand and make it your own.

Ingredients

1 Tablespoon + 1 teaspoon sesame oil

2 eggs, beaten

1 small head cauliflower, cut into big chunks

½ cup frozen green peas

¼ cup carrots, chopped

1 red bell pepper, diced

2 cloves garlic, minced

3 green onions, chopped

salt and pepper

3 tablespoons soy sauce

Directions

1Combine 1 teaspoon sesame oil with eggs in a bowl then whisk to combine and set aside.

2Put the cauliflower into a food processor fitted with the grating attachment. Don't over-process or it will get mushy. Alternatively, you could grate the cauliflower on a box grater. Measure out 4 cups grated cauliflower then save the rest for another use.

3Heat remaining 1 tablespoon sesame oil in a wok or large nonstick skillet over high heat. Add cauliflower, peas, carrots, bell pepper then stir fry until cauliflower is just beginning to turn tender, 3 - 4 minutes. Add garlic and green onions, season with salt and pepper, and then continue to stir fry until garlic is fragrant, 30 seconds or so.

4Push mixture to the sides of the wok to create an opening in the center then add the eggs and scramble. Toss mixture to combine then drizzle in the soy sauce and mix again to combine. Serve hot.
