This Carrot Cake recipe comes from our family recipe box. It is my mother-in-law's favorite cake.

Ingredients
2 cups flour
2 cups sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
3 cups carrots, grated
1 cup oil
4 eggs
1 small can crushed pineapple, drained
1 cup nuts, chopped - optional
Frosting
3 oz cream cheese, softened
¼ cup butter, softened
2 cups powdered sugar
1 tsp vanilla
Directions
1Preheat the oven to 325˚.
2Stir together dry ingredients and then add the carrots, oil, eggs and pineapple. Beat at medium speed for 2 minutes. Add nuts if desired. Pour into a greased 9”x13” pan and bake for 50 – 60 minutes.
