Caprese Egg-in-a-Hole

My brother David loves making Rocky Mountain Toast, which is basically a piece of bread with a hole in it with an egg in the middle and fried up in a pan. This Caprese Egg-in-a-Hole takes it to a whole other level and country, for that matter. I was inspired by the very talented Diane Morrisey on Instagram.

Ingredients

2 teaspoons butter

1 egg

1 slice bread

salt and pepper, to taste

3 tablespoons tomato sauce

1 tablespoon Parmesan, shredded

fresh basil, chiffonade

Directions

1Preheat the oven to 425° F.

2Melt butter in skillet. Cut a hole in the center of the bread with a biscuit cutter or glass. Fry the bread in melted butter until the bottom is golden brown. Turn over and crack the egg into the hole in the bread and add salt and pepper.

3Bake the toasts uncovered, until the egg is cooked through, about 10 minutes, or until the desired doneness.

4Top with tomato sauce, parmesan, and fresh basil.
