My daughter Zoe surprised me for my birthday and flew out from New Hampshire with her boyfriend Pierce. It involved a lot of planning with my other daughter Grace so I didn't find out. It was the best birthday present of all time for me since I haven't seen her since January 1, 2020.
Anyway, Zoe is working at a very well known bakery in Kittery Maine. She is learning pretty advanced baking skills in large quantities. She made these Brown Butter Rice Krispie Treats. The brown butter is a brilliant addition and takes it to a whole new level.

Yields: Makes 20 to 24 squares
Ingredients
12 tablespoons (1½ sticks) unsalted butter
2 x 15 ounce jars marshmallow fluff
8 cups Rice Krispies cereal
1 teaspoon vanilla extract
Directions
1Spray or grease a 11x13" baking pan
2In a large bowl, measure out 8 cups of Rice Krispies cereal
3Spray or grease a large pot and set aside. This will help the Rice Krispie treats from sticking to the sides of the pot.
4In a large pot or Dutch oven, preferably with a light bottom so you can monitor the color, melt the butter over medium heat (save the butter wrappers; you'll use them later for pressing the mixture into the pan). Swirl the pan occasionally to be sure the butter is cooking evenly.
5As the butter melts, it will begin to bubble and foam, and the color will progress from bright yellow to golden to, finally, a toasty-brown. Once you smell that nutty brown butter aroma, take the pan off the heat. (You'll see little bits of golden brown sediment forming; that's okay. However, if the sediment looks almost black, go ahead and pass the butter through a fine sieve to strain it out, then return the brown butter to the pan.)
6Add the marshmallow fluff. Use two spoons to get the mixture off of the spoon.
7Melt the marshmallow fluff until it is runny and melted. (3 - 4 minutes).
8Add the vanilla.
9Add the Rice Krispies cereal. Stir until all the marshmallow fluff covers the cereal.
10Quickly scoop the mixture out into your greased baking dish.
