Broccoli Salad with Smoked Almonds and Raisins

This Broccoli Salad with Smoked Almonds and Raisins is great because there's no cooking involved. Fresh broccoli is cut into small florets and tossed with a simple light mayonnaise-based dressing. I. add green onions, golden raisins, crunchy smoked almonds and sunflower seeds. I make it in the morning and add the nuts and seeds right before serving. It’s so good on a hot day.

Ingredients

1 pound broccoli, chopped into small pieces

3 tablespoons extra-virgin olive oil

3 tablespoons mayonnaise

1½ tablespoons apple cider vinegar

2 teaspoons Dijon mustard

1 teaspoon maple syrup or honey

1 garlic clove, minced or ½ teaspoon garlic powder

sea salt, to taste

⅓ cup green onions, diced

⅓ cup golden raisins

½ cup smoked almonds, roughly chopped

¼ cup sunflower seeds

Directions

1In the bottom of a large bowl, whisk together the olive oil, mayo, apple cider vinegar, mustard, maple syrup, garlic, and salt. Add the broccoli, onions, and raisins and toss to coat.


2When ready to serve, toss in the almonds, and sunflower seeds, reserving a few to sprinkle on top. Season to taste and serve.
