Bourbon Soaked Cherries

We went to the farmer's market and found these beautiful fresh cherries and decided to preserve them. It's only 3 ingredients - cherries, sugar and bourbon. You can use these Bourbon Soaked Cherries in a Manhattan or spoon them with their syrup over ice cream for an adult dessert. They will last a year in the refrigerator.

Directions
1In a medium saucepan, bring the bourbon and sugar to a simmer over low heat. Simmer and stir until the sugar dissolves, then turn off the heat and let sit for at least 15 minutes.
2Pack your cherries into two 25-ounce jars (or three smaller ones). Put them into the jars nice and tight without crushing the cherries. Pour the syrup over the cherries in each jar until it covers the fruit completely.
3Place the lids on tight and store the cherries in the refrigerator. They should be used within one year.
