Blueberry Cobbler

Blueberries are not only delicious, but are low in calories and packed with vitamins, fiber, manganese, iron, and antioxidants. The berries have been used for generations to treat and prevent digestive orders, improve circulation, maintain eye health, and reduce inflammation.

Ingredients

1 stick unsalted butter, melted

1 cup flour

1½ teaspoon baking powder

½ teaspoon salt

½ cup sugar

1 teaspoon vanilla extract

¾ cup milk

2 cups fresh blueberries

⅓ cup sugar

Directions

1Preheat oven to 350° F.

2Grease a 9 inch spring form pan and set aside.

3Combine the flour, baking powder, salt, ½ cup sugar in a large bowl and mix with a whisk. Add the vanilla extract, milk, and the melted butter. Mix until the batter is smooth. Pour into the prepared pan.

4In a separate bowl, toss the blueberries with 1/3 cup sugar. Spoon evenly over the batter - Do Not stir or mix!

5Bake 40 to 45 minutes.

6Remove from the spring form and allow to cool.

7Serve warm with vanilla ice cream.
