Beets In Orange-and-Lemon Sauce

I happen to love beets. I found this recipe for Beets in Orange-and-Lemon Sauce in one of my old cookbooks. When I served it to my husband and daughter Grace, they took one bite and said "WOW"! I have to admit they were incredible. The fresh citrus gives it a wonderful tart flavor which works really well with the sweetness of the beets.

  • Yields: 6 Servings

Ingredients

2 pounds beets

½ cup orange juice

½ cup lemon juice

2 tablespoons cider vinegar

1½ tablespoons cornstarch

2 tablespoons granulated sugar

1 teaspoon salt

¼ cup butter

1 teaspoon orange peel, grated

1 teaspoon lemon peel, grated

Directions

1Gently wash beets, leaving skins intact: remove leaves.

2Place beets in large saucepan; cover with cold water; bring to boiling. Reduce heat; simmer, covered, 45 minutes, or until tender. Drain; cool. Peel; cut into ¼-inch slices.

3In the same saucepan, combine orange and lemon juices, vinegar, and cornstarch; stir until smooth. Bring to boiling, stirring; mixture will be thickened and translucent.

4Add sugar, salt, and beets; cook gently, uncovered, 10 minutes, or until heated through.

5Stir in butter and orange and lemon peels.

OMG! I too love beets and this sounds great! Do you think I could put in less sugar? Beet Borscht was my go-to favorite at the deli restaurant we used to go to in the 60’s.
