My brother David sent us a fabulous box of Omaha Steaks, which are incredibly tender and delicious. We made Basil-Butter Steaks with Tomatoes and Broccoli Rabe for dinner, which was easy and outstanding.
Prep: 10 mins
Cook: 20 mins
Yields: 4 Servings
Ingredients
4 beef tenderloin steaks (1¼-inches thick and 6 ounces each)
½ teaspoon salt
½ teaspoon pepper
5 tablespoons butter, divided
2 cups grape tomatoes, cut in half
8 ounces broccoli rabe (rapini), trimmed and blanched
1 tablespoon fresh basil, minced
Directions
1In a 10-in. cast-iron or another ovenproof skillet, brown steaks in 2 tablespoons butter. Add tomatoes and broccoli rabe to skillet. Bake, uncovered, at 425° F until meat reaches desired doneness, 15 - 20 minutes (for medium-rare, a thermometer should read 135° F; medium, 140° F; medium-well, 145° F).
2In a small bowl, combine basil and remaining butter. Spoon over steaks.
