Banana Foster Rum Upside Down Cake

Try this new twist on the Classic Bananas Foster - Banana Foster Rum Upside Down Cake! This recipe is inspired by the classic New Orleans dessert, Bananas Foster. It's sweet and delicious!

Ingredients

1/3 cup unsalted butter


1 cup firmly packed light brown sugar

4 large bananas, divided


1/2 cup unsalted butter, at room temperature 


1/2 cup milk


3 large eggs, room temperature and lightly beaten


2 Tablespoons vanilla extract


2¼ cups all-purpose flour


1⅓ cups granulated sugar 


1 teaspoon baking powder


1 teaspoon baking soda 


½ teaspoon salt 



Banana Whipped Cream 


1 cup heavy cream 


1 Tablespoon sugar


2 teaspoon banana rum or banana flavoring 


Directions

1Preheat oven to 350 degrees.


2Add the 1/3 cup butter and mix with brown sugar. Put this mixture in the bottom of a 9” spring form pan.

3Slice 2 of the bananas and arrange on top of the brown sugar mixture.

4Mash the remaining 2 bananas combine with the next 4 ingredients in large bowl; beat at medium speed with electric mixer until blended.

In medium bowl, combine flour, sugar, baking powder, baking soda, and salt.
 Add to mashed banana mixture slowly, beating on low speed just until blended.


6Pour batter evenly over brown sugar and bananas in pan.


7Bake at 350 degrees for 40-45 minutes or until a wooden pick inserted in center comes out clean.


8Cool in pan for 1 minute. Loosen cake from sides of pan with knife, and invert onto a large rectangular serving platter.


Banana Whipped Cream

1Whip heavy cream until peaks form, adding sugar and rum while whipping. Serve with cake.
