Baked Salmon with Creamy Leeks

Leeks are incredibly versatile and delicious, yet they often get overlooked in favor of their more popular cousins, onions and garlic. Leeks offer a subtle, sweet onion flavor that's less pungent than onions, and add a delicate complexity. I made Baked Salmon with Creamy Leeks. The velvety texture and richness of the leeks enhanced with lemon, capers and dill is sublime. Oh, and it’s effortless to make!

Ingredients

4 salmon filets, skin on

2 pounds leeks, chopped

3 tablespoons sour cream

2 tablespoons butter

4 tablespoons olive oil, divided

1 lemon

1 tablespoon capers

¼ cup fresh dill, chopped

salt and black pepper, to taste

Directions

1Preheat the oven to 400 °F.
Melt the butter and 2 tablespoons olive oil in a pan. Add the leeks, sprinkle with salt and pepper, and sauté on a low to medium heat for 10-15 minutes until they are soft.
Add the sour cream to the leeks, stir and cook for a minute. Remove from heat, taste and adjust seasoning if needed, then pour into a shallow baking dish, big enough to hold the fish fillets
Rinse the salmon fillet and pat dry; make a few cuts on top of the flesh and brush the fish with 2 tablespoons of olive oil.

2Squeeze the juice of one lemon over the fish, and add salt and pepper liberally.
Sprinkle the dill and capers all over the salmon.

3Slide the fish on top of the leeks, and bake for 15 minutes.
Garnish with more lemon, capers and dill if needed.

I tried this because a friend of mine made it the day that it was posted and said that it was the first salmon recipe that she had tried that her husband loved!

How simple are leeks sauteed in butter and olive oil and then topped off with sour cream? I didn’t have the latter, so I added creme fraiche . Divine!

Definitely a keeper, Leslie!
