Baked Cauliflower Bites

These Baked Cauliflower Bites are a very low calorie and healthy snack. Serve with ketchup or other dipping sauce.

  • Prep: 15 mins
  • Cook: 20 mins
  • Yields: Makes 30 - 40 bites

Ingredients

2 cups cauliflower florets

1 large egg

½ cup onion, minced

¼ cup cheddar cheese, grated

¼ cup Parmesan cheese, grated

¼ cup breadcrumbs

¼ cup parsley, minced

¼ teaspoon garlic powder

salt & pepper, to taste

Olive oil

Directions

1Preheat oven to 375°F. Spray a mini muffin tin with cooking spray or lightly grease with oil. Set aside.

2Steam cauliflower in hot water for 3-5 minutes or until nice and soft, drain and chopped with a knife or blend in the food processor.

3In a medium bowl, combine all of the ingredients and season with salt and pepper to taste.

4Spoon about 1 tablespoon of mixture into mini muffin tins.

5Bake for about 20 minutes until golden.

Oh merde! I changed the recipe from free form tots on cookie sheet to bites in mini muffin pans. Thank you for catching my mistake. I have updated the recipe!
