Bacony Peas - Have you noticed that I love bacon? This is dead easy and delicious. It produced many contented smiles around my table.

Bacony Peas

Ingredients

4 slices bacon, chopped

1 shallot, minced

1 garlic clove, minced

1 lb bag frozen peas

2 tsp dark brown sugar

1 Tbs unsalted butter

Salt and pepper

Directions

1Cook bacon in large skillet over medium heat until crisp, about 8 minutes. Transfer bacon to paper towel lined plate and pour off and discard all but 1 tablespoon fat from pan.

2Cook shallot and garlic in bacon fat until softened an fragrant, about 1 minute. Stir in peas and sugar and cook, covered, until heated through, about 4 minutes. Off heat, stir in butter. Season with salt and pepper and sprinkle with bacon.
