This Avocado Lime Ranch Dressing is simply divine. It's great on a BLT salad, or any salad for that matter.
Prep: 15 mins
Yields: Makes about 2 cups
Ingredients
¼ cup onion, diced
3 medium clove garlic, peeled
2 Tablespoons lime juice
1 cup buttermilk
½ cup mayonnaise
½ cup sour cream
1 medium ripe avocado, peeled and pitted
1½ teaspoons salt
1½ teaspoons cumin
1 teaspoon sugar
¼ teaspoon black pepper
Directions
1Add onion and garlic to food processor, and finely chop. Pit and peel avocado, and add to the processor as well as remaining ingredients, mix until smooth. Refrigerate.
The NY Times ran an article on the California history of ranch dressing a little while ago, and directions on how to make it with fresh or dried ingredients (the original was only made with dried). I bet if you kept a stash of the dried mix on hand and just added it to the avocado/sour cream/buttermilk base here, it would be a handy pantry item for dips and dressings.
