This Acorn Squash with Sausage, Peas & Onions is surprisingly simple, inexpensive, and delicious. It's also very versatile given that you can add anything that you have on hand, like mushrooms, broccoli. etc. This is one of our favorite dinners. My mother-in-law used to make this for us. It reminds me of her every time I make it.

Ingredients
1 acorn squash, cut in half lengthwise
1 onion, chopped
1 teaspoon Italian seasoning
8 ounces breakfast sausage, cut into ½" slices
1 cup frozen peas
salt & pepper, to taste
2 tablespoons butter, divided
crushed red pepper flakes, optional
Directions
1Scoop out the seeds of the squash, place in a casserole dish and add ½″ of water. Bake at 375˚F for 40 minutes.
2Meanwhile, sauté onion, Italian seasoning and sausage until brown, add the frozen peas until warm.
3Take the squash out of the oven, add 1 tablespoon of butter to each. Then fill with sausage, onion and peas, salt and pepper to taste.
