Watermelon Gazpacho

We're in New York and were invited to my friend Barbara's for drinks. She served this amazing Watermelon Gazpacho. My husband LOVES Gazpacho and makes it every summer. Truth be told, I do not like Gazpacho, it's too acidic. Having said that, her Watermelon Gazpacho was absolutely delicious and by adding watermelon it totally tones down the acid.  It's the perfect balance of savory and sweet and it's so light and refreshing. I actually want more of it and will make as soon as I get home.

I bought these Cranberry Beans online from Rancho Gordo. They are amazing heirloom bean producers located in Napa, California. I decided to make this Cranberry Bean Soup. These beans are absolutely incredible, very creamy inside. These beans are versatile and velvety, this thin-skinned Borlotti bean produces a rich, indulgent bean broth, making it perfect for classic Italian dishes as well as simple pot beans. The soup was so easy to make. I actually made it in a slow cooker.

Albondigas Soup

Family Traditions

Greek Lemon Chicken Soup

This Greek Lemon Chicken Soup is from the Silver Palate Cookbook, an old '80s standby. This is one of the cookbooks that inspired me to cook.

The most difficult part of the recipe is tempering the egg so it doesn't curdle. Otherwise, it's not much different from boiling rice and tossing in some lemon. But somehow, this soup tastes much more luscious and creamy than it has any right to be. It tastes good both hot and cold, but I prefer it hot. I have included 2 recipes, the Instant Pot version and the stovetop version.
