Octoberfest arrived with a visit from my brother-in-law, Russell. He loves saurkraut like both his siblings. I don't mind it, but I could live without it. However, this recipe was outstanding and I even liked it. In fact, I had a second helping! He used 2 kinds of bratwurst.

Sausages with Herbed Beans
This is a great weeknight meal. It's very similar to cassoulet, which is a rich, slow-cooked casserole originating in the south of France, containing sausage and other meats. The beauty of this recipe is that unlike cassoulet, it cooks very quickly. I sent my husband, Eric, the shopping list via text message, he actually bought already cooked Portuguese smoke cured sausage seasoned with garlic and paprika. I thought it wouldn't work, but it was really delicious and I will be making this again.

This classic Cajun dish is done in a crockpot. You throw the rice and green peppers in at the end. It's great to serve it with a baguette or corn bread to sop up the spicy juices!

Baked Pasta with Sweet Italian Sausage & Kale
Kale is a nutritional superfood. It should have it's own cape! It has antioxidant, anti-inflammatory, and anti-cancer nutrients to name a few. On the downside, it has a large concentration of Vitamin K, which can be a problem for people taking blood thinners because it promotes clotting; the green also contains oxalates, which in lab tests have been associated with kidney stones and some gallstones. Eat raw kale is not a good idea, it will result in digestive issues. This is a great way to introduce some kale into your family's diet. Everyone loved it.

German CurryWurst
I love Curry Ketchup. I was thinking of mixing up my own "interesting" condiments. While I was doing my research, I found out about Currywurst in Germany. I had never heard of it and, of course, made it instantly. I served it as an appetizer with the curry sauce as a dip. It was so easy and really delicious. Everyone loved it. I will be making it again and again! As one might expect, there is much discussion and controversy over the authentic recipe, they seem to vary using tomato paste, sauce or ketchup. The one I made seemed good to me.
Sausage Carbonara
Try this Sausage Carbonara when you don't have bacon. Carbonara is an Italian pasta dish from Rome, based on eggs, cheese (Pecorino Romano or Parmigiano-Reggiano), bacon or pancetta, and black pepper. This recipe uses sausage instead of bacon. Spaghetti is usually used as the pasta, however, fettuccine, rigatoni, or bucatini can also be used. You can also throw in some frozen peas.

Delicata Squash Stuffed with Sausage, Sage, Shallots & White Beans is a great dinner. Having grown up in all four seasons, I always feel cheated living in Southern California. Over the long weekend, on our way back from the beach we stopped at a wonderful pumpkin patch. I usually buy acorn squash and make Acorn Squash with Sausage, Peas & Onions, but I decided to branch out and try the Delicata squash.

Bacon & Brown Sugar Smokies
Warning! These Bacon & Brown Sugar Smokies are addictive! This is reminiscent of Brown Sugar Bacon, which is transcendent. My husband thinks the little smokies should be bathed in Dijon mustard before wrapping up in the bacon, which would be very good.
