Sumac Spice-Crusted Chicken and Green Bean Salad with Spiced Yogurt Dressing

This Sumac Spice-Crusted Chicken and Green Bean Salad with Spiced Yogurt Dressing is a great salad that you can make in the morning.

Sumac is a red spice is harvested from shrubs in the Middle East and traditionally sun-dried. It is tart, acidic and tastes of lemons. This dark red powdered berry had a nutty texture with a tart, sour lemon with a slightly fermented taste. Sumac can be used as you would lemon and salt for chicken, fish, vegetables or hummus.

White Bean, Hearts of Palm & Artichoke Salad

This White Bean, Hearts of Palm & Artichoke Salad is something I threw together using some of my pantry items. It turned out to be a great combination of things. Use this dressing recipe and with different kinds of beans, cheeses and nuts from your pantry to make your own version. This lasted a few days in the fridge and was great for lunch.

Curried Chicken Waldorf Salad

This Curried Chicken Waldorf Salad is an update on the classic salad. The dressing combines mayonnaise, curry powder, turmeric and a bit of mango chutney, which adds the perfect amount of sweetness to compliment the tart Granny Smith apples. I love the crunchiness of this salad.

Corn & Hearts of Palm Salad with Dill Mayo

This Corn & Hearts of Palm Salad with Dill Mayo is a combination of ingredients I had on hand. I happen to love hearts of palm. The dill mayo uses some dill pickle brine, which made my husband the pickle fanatic very happy. I just checked and I have eight other corn salads on my blog. I guess this should be my theme song - "She's a corn-fed Indiana girl".

Romaine Salad “Caesar Gratin”

I saw this recipe for Romaine Salad “Caesar Gratin” on Eric Ripert’s Instagram. He is one of my favorite French chefs. We have a salad most days for lunch. I buy romaine almost exclusively because it seems to last the longest. I thought I would try this new twist on a classic Caesar salad. It turns out that it's absolutely delicious and makes a nice presentation. I left out the anchovies, but it's up to you.

Buckwheat Crêpe with Goat Cheese, Honey and Arugula Salad

My friend Barbara told me about this restaurant called La Mercerie Café at the Guild in Soho. There is also an incredible shop inside the restaurant selling exquisite furniture and tableware. Anyway, I ordered this Buckwheat Crêpe with Goat Cheese, Honey and Arugula Salad. It actually had Spinach inside, which I didn't like so I left it out of this recipe.

Hatch Green Chile Potato Salad

If you know me well, you know I have been obsessed with Hatch chiles for years. I used to buy 38 pound bags. They only come from the Hatch Valley in New Mexico. They have a very short season, typically from the first of August through the end of September. The Hatch Valley is believed to have the best terroir in the entire world to grow these particular chiles. And, did you know that green chiles contain 356% more vitamin C than oranges? Anyway, I could go on and on....

Supermarkets have jumped on the band wagon and are roasting them in their parking lots. I'm all for it. This Hatch Green Chile Potato Salad was one of the Hatch related things for sale I purchased yesterday. It takes ordinary potato salad to a whole new level in my opinion.

Cucumber & Radish Salad in a Yogurt Dressing

This Cucumber & Radish Salad in a Yogurt Dressing is light and refreshing. Crunchy slices of cucumbers and sharp pungent radishes and a winning combination. Radishes have many health benefits. The one that interests me most is that they contain compounds that help purge cancer-causing substances and prevent the development of tumors. The crunchy detoxifiers are thought to help protect the body against colon, kidney, intestinal, stomach and oral cancer, in particular.

Herby Corn Salad

My daughter Zoe loves fresh corn salads, so I am always trying to come up with new versions. This Herby Corn Salad turned out to be a real hit with my family. And you don't even have to turn on the oven!

Summer Berry Chicken Salad

This Summer Berry Chicken Salad is actually a copy cat recipe from Wendy's.They only sell this for a limited time in the summer. It's absolutely delicious and rather patriotic looking. Herb-marinated grilled chicken breast topped with sweet, hand-cut strawberries and blueberries, roasted almonds, crumbly feta cheese, and tangy-sweet Raspberry Vinaigrette on a bed of spring lettuce mix. It’s bursting with fresh, summery flavors. You can easily make it at home.
