Japanese Potato Salad is unique in that it is half mashed and half chunky, which gives it a creamier texture. It has grated carrots, cucumbers, scallions and diced ham. To emulate Kewpie mayonnaise, you add a little bit of sugar. The Yukon Gold potatoes I used where particularly gold in color!

She also sends out a preview recipe, which I always make. This recipe for Emily's English Roasted Potatoes exceeded my expectations. Emily as in Emily Blunt the actress, who was on her show at one point and taught Ina this recipe. Anyone that knows me, knows I like crispy anything, especially potatoes. Well, this is the quintessential English roasted potato. I encourage you to get right on this!

These crispy Ham Croquettes are little logs of seasoned minced ham and mashed potatoes. They would also be good as an appetizer with a cold glass of rosé wine. What's not to love!?

Baked Potato & Leek Soup with Cheddar & Bacon
This Baked Potato & Leek Soup with Cheddar & Bacon was what I made for dinner last night. This classic potato and leek soup uses milk and sour cream instead of heavy cream, to reduce the fat. The potatoes are first baked and then combined with the sautéed leeks. The mixture was then puréed. The milk, sour cream and cheese were added at the final stage of cooking. The soup is creamy and topped with chopped green onions, bacon and grated cheddar cheese.

Smashed Sweet Potatoes
Ina Garten's Smashed Sweet Potatoes is my new favorite sweet potato recipe. I grew up having canned yams with a pound of brown sugar and butter... Yes, there were a tad sweet! The potatoes are roasted and then smashed with orange juice and a little cream. My daughter wanted to top it with bacon, pecans, and some fresh sage, but this is optional.
