Cheesy Hasselback Potato Gratin

Who doesn't love a cheesy potato gratin? This Cheesy Hasselback Potato Gratin has creamy, layered potatoes that are baked to become crispy browned on top. It's a recipe where Hasselback potatoes meet gratin. The potatoes are thinly sliced and put in the casserole dish vertically, which creates way more crispy edges.

Leek and Potato Soufflé With Ham and Fontina

I made this Leek and Potato Soufflé With Ham and Fontina. We have made Gruyère Cheese and Chive Soufflé for over 32 years. This leek and potato version is less of a soufflé and more of a fluffy potato dish. The leeks and ham elevated the flavor of the potatoes. If you’re afraid of making a soufflé, this is a good place to start. The potatoes make it less delicate, so it’s less likely to fall.

Sweet Potatoes with Orange Bitters

Bitters add a complexity of flavor, usually used in cocktails, as a way to highlight the flavors of a dish. These Sweet Potatoes with Orange Bitters from Yotam Ottolenghi's Plenty More are sweet, bitter, salty, and bursting with flavor. You can read about the interesting history of Angostura Bitters.

Corned Beef Casserole

This Corned Beef Casserole has layers of potatoes, corned beef, thinly sliced shallots, brussels sprouts and I topped it off with some Irish cheddar cheese. I have to say this was so good that I'm not sure I will ever go back to making it the traditional way. It can be made ahead ready for the oven later in the day.

Potato, Ham & Leek Gratin

We love leeks and I always say, they are under-utilized in the US. This Potato, Ham & Leek Gratin is a classic combination. You can leave out the ham to make it vegetarian. It gets topped with Gruyère cheese. What's not to love?

Pork Chop Shop with Sweet Potato Mash and Spinach

When I was recently at my daughter Grace's house I was in her kitchen watching her cook us dinner (one of my favorite pass times!), I saw Snoop Dogg's From Crook to Cook cookbook on her shelves. It's actually her roommate's book. I leafed through it and made his Pork Chop Shop with Sweet Potato Mash and Spinach. The recipe looks like a long process, but it's not. The lemony spinach works really well with the sweet potato mash and the barbecue sauce is divine.

I love his long friendship with Martha Stewart and their show Martha & Snoop's Potluck Dinner Party. Gee, I wonder what they have in common?!

Pan-Fried Giant Latke with Caramelized Apples and Sour Cream

I happen to love latkes, but making them is a process. This Pan-Fried Giant Latke with Caramelized Apples and Sour Cream is kind of cheating, but it works. You can serve it in slices. I left out the matzo meal. My method of squeezing the water out of the potatoes is using a potato ricer, which is one of my favorite kitchen tools. I also use it for spinach, canned artichoke hearts, etc and it make the best mashed potatoes.
