While surfing the web, found this recipe on an Indiana Farmer's site (yes, you know you are leading an exciting life when you are checking out farmer's websites!). I have no idea why I made it, because I generally hate soup of any kind. It was really delicious and my husband said we need to keep this recipe in the family archives. I added some white pepper to it, but the simplicity is what really makes this soup good. Some crumbled bacon bits would not go amiss as a garnish...

Hasselback Potatoes UnPlugged
I love Hasselback Potatoes! Hasselback potatoes cut in such a way as to resemble a fan or accordion when roasted. The name is derived from the restaurant where they were first introduced in the 1940s, Hasselbacken in Stockholm, Sweden which opened in that city in 1748 and where they are called hasselbackspotatis. The outside of the potato becomes crisp and brown while the inside is soft and creamy. This version is sort of cheating because you cut the potatoes all the way through.

Indian Cauliflower and Potatoes
Indian Cauliflower and Potatoes are so good, it has cumin, ginger, coriander and turmeric. Indian food is something I could eat every day. I love it. I started eating it after I got out of college in New York city. It was the cheapest possible meal. For $4 you could have a feast. I used to order Vindaloo and each time I would want it hotter and hotter. It got to the point that my friends told me to stop because it looked like I would have a heart attack! I did taper off, my stomach needed a break! After living in New York, I moved to London - a virtual Indian food mecca. Now we live in Los Angeles, where good Indian is scarce. This week my husband and I tried a new place - finally some stellar Indian food! We brought home leftovers and to bulk it out for the next day, I made this cauliflower dish. Cauliflower and potato are a perfect vehicle for the cumin, ginger, coriander and turmeric. By the way, the restaurant is called Nirvana in Arcadia, CA.

Lemon & Thyme Potato Gratin
I made this Lemon Thyme Potato Gratin for a client (which I will have to admit, I had never made before!). She called me a week later and said it was the best potato gratin they had ever had, and can I make it again for a party using her pan. It's based on a Martha Stewart recipe. I used cream instead of milk - maybe that's why it was so good! Unfortunately, I did not take a picture of the final product because I delivered it par baked...

Party Potatoes
Party potatoes are also called Funeral Potatoes. Funeral potatoes are a traditional Mormon potato hotdish, or casserole, that originated in the U.S. state of Utah. The dish usually consists of hash browns or cubed potatoes, cheese (cheddar or Parmesan), onions, cream soup (chicken, mushroom, or celery) or a cream sauce, sour cream, and is topped with butter and corn flakes or crushed potato chips. Reminiscent of my mid-west upbringing, where every side dish had a crunchy topping. However, this recipe is minus the crunch!

Spanish Roasted Potatoes with Tomato Sauce
I am always looking for new ways to make potatoes. "Patatas Bravas" is a classic Spanish tapas dish and is served in bars all over Spain. The sauce has a slight bite from the Tabasco, hence the name bravas, which means "fierce." They are also called "angry" potatoes. You can serve them with toothpicks as a snack or as a side dish.

Roasted Balsamic Potatoes, Onions and Broccoli
Some of my best recipes have come off the packages of products. This one I found on the side of a bag of Pacific Gold Baby White Potatoes. It was one of those things that I happened to have all the ingredients and I have a daughter whose is mad keen for balsamic soaked anything. It goes well with Uncle Russell’s Flank Steak.

Baked French Fries
Who doesn't love French Fries? I found a French fry cutter tool in my mother-in-law's cupboard. She claims she had never seen it before. It screamed MAKE FRENCH FRIES NOW to me! Of course, I did just that. You can add endless kinds of salts, seasonings, Parmesan cheese to this recipe.
