Fagioli Al Uccelletto “Tuscan Baked Beans”

These are the beans I served with the Italian-Style Slow-Roasted Pork Roast with Oranges & Onions . They go perfectly with it. You can use canned beans instead of soaking the beans overnight, if you want to make it easier. These beans are a typical dish from Tuscany, particularly in the Florence area.

Sausage Carbonara

Sausage Carbonara

Try this Sausage Carbonara when you don't have bacon. Carbonara is an Italian pasta dish from Rome, based on eggs, cheese (Pecorino Romano or Parmigiano-Reggiano), bacon or pancetta, and black pepper. This recipe uses sausage instead of bacon. Spaghetti is usually used as the pasta, however, fettuccine, rigatoni, or bucatini can also be used. You can also throw in some frozen peas.

Roasted Cauliflower, Tomatoes, and Pepperoni Pasta

Roasted Cauliflower, Tomatoes, and Pepperoni Pasta

Cauliflower seems to have made a come back. Try this Roasted Cauliflower, Tomatoes, and Pepperoni Pasta. I love roasted cauliflower. I have many cauliflower recipes on this blog. You can use short pasta, such as penne or fusilli for this recipe, though I was told by my Italian opera singer friend that short pasta is for peasants!

Fresh Pumpkin and Sage Pasta

Fresh Pumpkin and Sage Pasta

Fresh Pumpkin and Sage Pasta is healthy and easy to make. One of my favorite autumn meals is pumpkin ravioli with sage. We had this right after we got married over 30 years ago. I have made raviolis, but I was lazy this weekend and tried this version, which uses grated pumpkin. This is a fairly healthy dish, but after making it, I thought it could use some creaminess. Here is what I would do next time:
Take out one cup of the sautéed pumpkin and purée it with about 1/2 cream or half and half, then stir it into the pumpkin mixture.

Tiramisu

This Tiramisu is a very simple, classic Italian dessert. Tiramisu in Italian means "pick me up" or "lift me up" and is a popular coffee-flavored Italian dessert. It is made of ladyfingers dipped in coffee, layered with a whipped mixture of eggs, sugar, and mascarpone cheese, flavored with cocoa.
