Chicken Liver Pâté with Sage, Apple and Thyme

I made this pâté using chicken livers. I was really the other ingredients that I found appealing. We happen to have a monstrously large sage plant in the back garden. Also, the apple gives it a hint of sweetness. I know most sane people would never dream of making pâté, but it's easy once you get over the whole liver thing!

Here is one way to use up some of your summer vegetable harvest. I actually did not place the sliced vegetables in compact upright rows due to the fact the tomatoes, zucchini and squash were all different sizes. I just cut them up and stirred it all together. You can do it either way, it all tasted the same!

Coq au Vin in a Slow Cooker

Coq au vin is a French dish of chicken braised with wine, lardons (or bacon), mushrooms and pearl onions. More traditional versions of coq au vin have the sauce thickened with rooster blood at the end of cooking - yeesh! You will be pleased to know that I did not thicken my sauce this way!

Browning the bacon, chicken and vegetables briefly before adding them to the crock pot creates deep rich flavors in both the chicken and sauce. Serve with a crusty baguette.
