Lemon Curd
This is the Lemon Curd I served at the tea I catered. It's so easy to make and it got rave reviews. Fruit curd is a dessert spread and topping usually made with lemon, lime, orange or raspberry. The basic ingredients are beaten egg yolks, sugar, fruit juice and zest which are gently cooked together until thick and then allowed to cool, forming a soft, smooth, intensely flavored spread. It can be used for bread, scones, toast, waffles, crumpets, pancakes, or muffins.Curds are different from pie fillings or custards in that they contain a higher proportion of juice and zest, which gives them a more intense flavor.

Peanut Butter Chews
Try these Peanut Butter Chews. A no bake cookie recipe. I went to San Marino High School in San Marino, California the '70s. I hated high school. I moved to California my freshman year and was always an outsider. I still feel like an outsider, anyway, nothing that years of therapy won't solve..... I digress.... One high point in my time there was a "cookie" they sold in the cafeteria, which also sold corn dogs that had a greenish tinge to them! This cookie-ish thing was called a peanut butter chew. It was very weird and wonderful. You don't even have to bake these! So for all my SMHS friends, without further ado - the peanut butter chew! Nice rhyming, if I do say so!
