Yes, It's Hatch Chile season! I LOVE them. This year I did not opt to buy a 35-pound bag of roasted chiles, mainly because I have no room in my freezer which makes me very sad! I bought a small bag at Whole Foods and roasted them (or should I say, I asked my husband to roast them!) on the Big Green Egg. This recipe for Baby Potatoes with Roasted Hatch Chile Vinaigrette comes from Melissa's Produce. I simplified it a bit. I love using baby potatoes because they cook very quickly.

Tortilla Soup
WARNING: This is gonna be hot!
There are hundreds of recipes for tortilla soup. I found on in the Los Angeles Times years ago and have been making ever since. The first time I made this soup, I made a very big mistake. Instead of putting one chipotle chile packed in adobo sauce, I put the whole 4 ounce can of chiles in! This is REALLY not a good idea. We manage to eat it anyway…. I won’t go into details!
The reason that I like this recipe is that it is not roux* based, which makes it lower in fat. When I open a can of chipotle chiles packed in adobo sauce, I put one in the recipe. The rest I wrap individually in plastic wrap and put them in a zip-lock bag and freeze them for the next time I make soup.
*Roux is a cooked mixture of flour and a cooking fat, like butter, that is used to thicken sauces and gravies.

Creamy, Cheesy Chipotle Chicken
A chipotle is a smoke-dried jalapeño. You can buy chipotles in a can with adobo sauce, which has chipotles that are stewed in a sauce with tomatoes, garlic, vinegar, salt, and spices. The first time I made tortilla soup, I used a whole can of chipotles! The recipe called for one canned chipotle. Let's just say it was smoking hot soup!!!
This Creamy, Cheesy Chipotle Chicken has a great smoky flavor and is cheesy and comforting. It's easy to make and perfect for a dinner after a busy day.

Green Chile Frito Pie
Frito pie is traditionally chili meat, cheese poured into a snack-sized sack of Frito chips cut open sideways. This recipe is more of a bowl. I had it at the Plaza Café in Santa Fe, New Mexico. It was probably one of the best things I eaten in a long time. I have always been a fan of green Hatch chilies. This Green Chili Frito Pie was so good and VERY spicy, just they way I like it!
