Chicken Cordon Bleu

Contrary to popular belief, Chicken Cordon Bleu isn't French. It likely originated in Switzerland around the 1940s. The first documented recipe appeared in a Swiss cookbook in 1949. It is based on schnitzel, a thin, breaded cutlet, filled with cheese in this case. Most recipes roll the ham and cheese in the chicken. This recipe puts the ham, cheese and bread crumbs on top and it gets baked in the oven, which makes it way easier. It’s served with this Parmesan-Dijon Cream Sauce sauce, which makes this dish outstanding.

My daughter Grace made us this fabulous Lemon and Dill Risotto with Roast Chicken. It's so easy and all done in one pan. If you are intimidated by risotto, just relax, the rice gets cooked under the chicken. All the juices from the chicken adds depth of flavor to the risotto. If you don't want to spatchcock your chicken, just use bone-in chicken pieces or thighs.

This Creamy Lemon-Parmesan Chicken Casserole is delicious and kind of a more elegant version of what my family calls Nancy Drew Casserole (officially called Hannah Gruen's Chicken and Rice Casserole), which is basically shredded chicken, mushroom soup, uncooked rice and water. Anyway, back to this much more flavorful version, which uses shredded chicken (I used a rotisserie chicken), broccoli, and orzo, which is enveloped in a creamy lemony sauce and topped with toasted panko.

Million Dollar Chicken is a dish inspired by Neiman Marcus Dip, a recipe created by chef Helen Corbit in the 1950s. She worked at the Zodiac Room, a restaurant in the Neiman Marcus department store in Dallas, Texas. The recipe was never officially released, but it is believed to have been a combination of cream cheese, mayonnaise, sharp cheddar cheese, bacon, green onions, and almonds. The name "Million Dollar Dip" is said to have come from the fact that the dip was so good, it tasted like it cost a million dollars.

Marry Me Chicken is a dish that gained popularity on TikTok in 2021. It's a creamy, flavorful chicken dish with sun-dried tomatoes, garlic, spinach and herbs. The name comes from the claim that the dish is so delicious, it will make you want to marry the person who made it for you. This version adds pappardelle pasta. I have to say, I would be tempted to marry myself! It's really delicious.

Marmite’s distinctive taste is represented in the marketing slogan: "Love it or hate it." Such is its prominence in British popular culture that Marmite is often used as a metaphor for something, or even someone, that is an acquired taste or polarizing. This Marmite Chicken with Cacio e Pepe Butter Beans is absolutely delicious. The marmite adds a subtle umami flavor to the chicken and using the starchy bean liquid works perfectly in place of the starchy pasta water in a traditional cacio e pepe; it emulsifies perfectly with the parmesan to create a silky, glossy sauce.

Chicken Tortilla Soup

This Chicken Tortilla Soup is from The New York Times. This is a nontraditional method. There are many variations of tortilla soup. This one is made in a slow-cooker, but I have also included the stovetop version. The soup gets its depth of flavor from roasting the tomatoes, onions, jalapeños, and garlic until they become charred. It's then put in a slow-cooker with the chicken for about 5 hours. To me the toppings are key. I like adding fried tortilla strips, avocado, cheese, cilantro, etc. I also have another version on this blog here.
