I made everything from Samin Nosrat's, Salt, Fat, Acid, Heat: Mastering the Elements of Good Cooking Netflix episode 4 - Heat. I woke up and just cooked. Actually, I had to marinate this chicken the day before and also, I made her focaccia, which I started the day before. Anyway, it was my idea of fun and relaxing. Her Buttermilk-Marinated Roast Chicken, which is the epitome of tender and delicious. It's so simple, just chicken, salt and buttermilk. The buttermilk helps to tenderize the chicken and it does just that!

Green Chile Chicken Tamales

Every Christmas eve my mother-in-law served tamales and albondigas soup. She got her tamales from a local source in East Los Angeles. My friend asked if I wanted to make tamales with her. Absolutely! We corralled another friend, who actually knows what she’s doing and my daughter. We each bring our own filling. I've made Beef Tamales with Red Chili Sauce, pork and Green Chile Chicken Tamales. I had made tamales in the past, but only one dozen. This time, we made 150! My friend said that you have to take a shot after every dozen is completed! Given that it was 10 am when we started, I only did 2 shots, and then there were those mimosas…. It was so much fun, that we do it every year.

Buffalo Chicken Pizza

One night my kids and my nephew were over. It was very late at night and they were hanging out in the kitchen. I went to bed and woke up at midnight to a heated argument between my daughter and her boyfriend. It was very loud and seemed rather intense. In the morning when I woke up I asked my husband what on EARTH WERE THEY FIGHTING ABOUT!? He said it was about Buffalo Chicken Pizza. Seriously? My daughter thinks that it's a ridiculous idea, but it's one of her boyfriend's favorites. I promptly went to the market and bought a bottle of Franks Hot Red Sauce and some chicken, threw it in the instant pot and shredded it up. We were planning a Big Green Egg pizza grilling night, so I added it to the menu. It turns out, it was one of the best pizzas of the night! It was topped off with some ranch dressing and sliced celery. They vetoed the blue cheese!

Harissa Chicken

My friend Jessica gave me a tube of Harissa. Harissa is a hot chili pepper paste, which is the basic flavoring agent in Tunisian and Moroccan cuisine, it's extremely versatile. This Harissa Chicken is incredibly easy to make on a sheet pan. You can adjust the amount of Harissa you use, depending on how spicy you like it. My husband calls it the ketchup of Morocco.
